Potential Routes

Yes, Bordeaux is often mentioned as a route not served from MAN, along with the likes of Seville and to the east, Bucharest. Tallinn operated for a while and was dropped by Ryanair and I have a feeling Vilnius was too (Air Baltic?) a few years ago but not sure about that.
 
I do think the above routes should now be the priority.

Bordeaux should be ripe for the picking for Flybe. Madness to think that they can make RTM/LUX work but not BOD.

In terms of Europe, I hope MAN/RYR are talking closely, as I see RYR have now added BRS-OTP (so wonder why Manchester is now the last major UK airport not to have a link), and Ryanair are also about to open Lviv in Ukraine, so, hopefully MAN can be in with a shot too.
 
Considering Manchester's catchment area you would think that the established low cost operators which already serve MAN would be able to fill flights to destinations like Bordeaux, Seville and even Granada with the right marketing. Like I said the short break market are always looking for new places to discover, I know we are, only to be disappointed when we look.
Maybe it's a shortage of aircraft and good departure slots. They seem to have all bases covered in the south east, so maybe they need to start looking to help broaden our horizons up here.
