Ryanair do not use Copenhagen airport, however, they do use Malmo which is just at the other side of the Oresund Strait. I suspect if they were to open a competing route, it would go to Malmo.
I'm not sure I see LBA - Malmo competing with Easyjet to Copenhagen from Manchester and SAS to Copenhagen from Manchester and Humberside. This is DESPITE Copenhagen being closer to Malmo airport than Manchester or Humberside are to Leeds. I think the public are starting to get more demanding of the low cost airlines and Easyjet, in particular, are serving that niche well. People want to end up in the right place.
Having said that, it would be slightly more convenient and, probably, cheaper to get to Copenhagen this way. If Ryanair were to open that route, you can bet they will market it as Copenhagen.
